My crunchy lemon squares recipe is the perfect thing in the spring. My kids don’t like anything lemon flavored, however, both my husband and I love lemon-flavored desserts. So, when I make my lemon bars the two of us get them all to ourselves. Do you think that is mean? I think it is inventive. It is like making a special dessert just for the two of us. Crunchy Lemon Squares Recipe

Ingredients:

  • 1 cup oats (uncooked)
  • 1 cup flour
  • 1/2 cup coconut
  • 1/2 cup chopped pecans
  • 1/2 cup firmly packed brown sugar
  • 1 tsp baking powder
  • 1/2 cup butter (melted)
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice (about 6 lemons)

Instructions:

  1. Preheat oven to 350 degrees.
  2. Then grease the sides and bottom of an 8 x 8 baking pan. You can also line the pan with parchment paper.
  3. Combine oats, flour, coconut, nuts, sugar, baking powder, and melted butter in a medium-sized bowl.
  4. Then stir to form a crumbly mixture.
  5. Pat half of the mixture into the bottom of the prepared pan.
  6. In a separate bowl, whisk sweetened condensed milk and lemon juice. Stir until combined.
  7. Then pour the lemon mixture on top of the crust that is already in the baking pan.
  8. Sprinkle the remaining crumb mixture on top.
  9. Then bake for 40 – 45 minutes or until lightly brown.
  10. Remove the pan from the oven and allow to cool completely before cutting into 9 squares.

We dove right into our pan of lemon squares and loved every minute of it. I only do the lemon trick once or twice a year but it works like a charm. I can do something just for my husband and me without half of it being eaten by the kids before he even gets home.
