They are great just by themselves with no toppings needed. That makes them a great on the go breakfast that won’t bust your diet! Plus they make a great addition to any meal plan because it is easy to make them ahead of time.

Healthier Peanut Butter Pancakes

Ingredients:

  • 2 cups flour (1 2/3 cup white, 1/3 cup whole wheat) (NOTE: you can also use gluten-free alternatives here.)
  • 1 tbsp baking powder
  • 1 tbsp milled flax seed
  • 3/4 cup creamy peanut butter
  • 1/4 tsp salt
  • 2 tbsp vegetable oil
  • 1/4 cup honey
  • 2 eggs
  • 2 1/4 cups milk

Instructions:

  1. Mix all ingredients together well.
  2. Pour about 1/4 cup of the mixture onto a greased griddle.
  3. Flip when bottoms are brown and bubbles form on the top.
  4. Brown the opposite side of each pancake then remove each to a serving platter.

This recipe makes a huge stack of peanut butter pancakes. I like to take them and layer with freezer paper in between them. Then I place in a freezer bag and freeze the extras. When you need them, just pull them out of the freezer one at a time in the morning and heat up. They are great for eating on the go!

I personally feel that these don’t really need any topping. They just perfect for me to eat on their own while warm. If you want, you can add just a light dusting of powdered sugar to the tops.
