Make homemade granola in minutes with this super simple cranberry granola recipe. It is healthy and delicious with a hint of white chocolate. Plus it makes a great snack or breakfast. Cranberry Granola with White Chocolate

This recipe can also be altered to be allergy-friendly which is something that I am super aware of these days. I made some notes below for those that have food and intolerance issues.

Ingredients:

  • 2 cups old fashioned rolled oats (be sure to use gluten-free if you have allergies)
  • 2 tbsp olive oil
  • 1/3 cup white chocolate chips (you will want to look for a brand that is allergy-friendly if you have issues)
  • 2 tbsp honey
  • 1 cup walnuts (omit for nut allergies)
  • 5 oz package dried cranberries

Instructions:

  1. Preheat oven to 350 degrees.  
  2. Line a cookie sheet with parchment paper.  
  3. Mix together oil and honey.  
  4. Then toss with oats to coat.  
  5. Spread oats evenly on the prepared cookie sheet.  
  6. Bake for 16 – 20 minutes until lightly toasted throughout. NOTE: Be sure to toss occasionally for even toasting.  
  7. Then remove from the oven.
  8. While still hot, mix oats with white chocolate chips. The chocolate should create clusters of granola.  
  9. Let granola mixture cool then add walnuts and cranberries.  
  10. Store in an airtight container. Serve with milk for breakfast, over yogurt, or just grab a handful anytime.

This granola did not last long at my house and I bet it won’t last at yours either. I like making recipes like these in bulk and storing them in jars. Then I can grab a handful whenever I need a snack.
